Croque Madame

There are a few recipes I love but rarely make, they are either too labor intensive or too heavy but now and then I find myself craving something that takes some patience to make. The croque madame, a rich and creamy French grilled cheese with ham is one of those rarely ordered, rarely attempted recipes.  However, after spending the last several days pouring over the couture shows and embracing the overcast mornings and early afternoons, I wanted something sharable and a nod to Paris.  I add thin slices of jalapeño and top with torn mustard greens and arugula to help cut through the richness. Pairing this with a chilled glass of Sauvignon Blanc creates a memorable French-inspired dish with a few Ten6Twelve twists.  Bon apetite!

Brioche bread (2 slices)

1 egg

1/2 cup mustard greens

1/4 cup wild arugula

Trader Joe’s truffle cheese, sliced

1 cup grated Gruyère

2 tablespoons stone ground Dijon

1 large egg, fried

5 slices jalapeño

3 slices black forest ham

5 tablespoons butter

3 tablespoons flour

Salt

Pepper

Nutmeg

1 1/2 cups whole milk

1 tablespoon lemon juice

1.  Melt butter in sauce pan, add flour and whisk until incorporated.  Add milk and continue whisking.  Bring to a boil.  Add salt, pepper and nutmeg to taste.  Remove from heat and let cool.

2.  Spread 1 tablespoon of Dijon on each slice of bread + 2 tablespoons béchamel on each slice of bread

3.  Add truffle cheese slices and Gruyère to one side + jalapeño slices; top with ham and second slice of bread to create sandwich

4.  Heat 2 tablespoons butter in pan and add sandwich.  Grill until golden brown on each side, 2-3 minutes.

5.  Place sandwich on baking sheet and top with 2 tablespoons béchamel, broil until bubbling and golden brown

6.  Fry egg for 3 minutes until white is set and yolk is still runny

7.  Tear arugula and mustard greens and toss in 1 tablespoon lemon juice

8.  Top sandwich with greens and garnish with egg

Notes:  use leftover béchamel for mac and cheese.

Serves 2 (when shared)
